The Bénichon is the most Fribourg of meals, and probably the longest. It is eaten with family, it lasts all afternoon, and it follows an order no one questions: cuchaule and mustard, cabbage soup, jambon de la borne, leg of lamb, poires à botzi, meringues and double cream.
It's a tradition Fribourg locals actively seek out every autumn, and few restaurants in the centre still serve it the proper way.
